Chef Tim is back in Final Cut Steakhouse to explain how he prepares the whole fish used in many of the dishes offered at Hollywood Casino St. Louis! For the month of August, Final Cut Steakhouse has two fish options: sustainable, farm-raised salmon or wild, line-caught Alaskan halibut. Both of these fresh fish options come in whole and are butchered in house to ensure that customers are getting the freshest fish possible. 

Once Chef Tim perfectly cuts the salmon, he blackens it to create the Blackened Salmon dish that is currently featured on the Final Cut Steakhouse summer menu. For the halibut, Chef Tim pan sears it to make the pan-seared halibut with green chili sauce, also served at Final Cut Steakhouse.
