Chef Tim is at Final Cut Steakhouse to talk about one of the new items featured on the Summer Menu: the Blackened Salmon! Full of bold and bright flavors, the sustainable Atlantic salmon utilized in this dish is delivered fresh to Final Cut Steakhouse every day! To make this summer special, Chef Tim first seasons the fresh Atlantic salmon with blackening seasoning of herbs, Cajun seasoning, Creole seasoning, and salt before placing it in a screaming hot pan to sear the salmon on either side. The blackening of the seasoning creates a crispy crust on the salmon that provides a different texture and flavor profile from the fresh salmon within. 

To finish off the dish, Chef Tim pairs the salmon with white cheddar grits and baby vegetables that rotate depending on what is fresh and available that day (here it is yellow patty pan squash, baby zucchini, and baby carrots). For the final touch, Chef Tim finishes the dish with a Spanish style sauce Romesco made from sweet red peppers, garlic, shallots, and a little bit of cayenne for heat.
